Last week on twitter, I saw a Food Network recipe posted and it was conveniently a Pita Pizza. I was excited and saved it in my internet favorites, only to pull it out last evening and make myself a yummy pizza on pita bread! I stopped at the grocery store to pick up a package of wheat pita bread, and got in gear to make my pizza. I loosely followed the recipe, but found it more inspiring rather than following it step-by-step. Here is a photo of my pizza. It was soooo good and I felt relatively healthy because there wasn’t much too it!

. I didn’t have any arugula, so I just modified everything and figured I would include my
adaptation to the recipe below!
- 1 Whole wheat pita
- Classico marinara sauce
- Red onion
- Light Olive Oil
- Weightwatchers Four cheese shredded (I had to try it! Healthier option and tasted good!)
- Basil spices
Step 1: Cut up red onion into rings, brush lightly with olive oil and season with salt. Grill in a pan for 3 minutes on each side. Separate the rings and set them aside.
Step 2: Brush each side of the pita lightly with olive oil and grill it in the pan so it is browned.
Step 3: Spread marinara on pita, add onions and cheese. Keep in the pan and cover it to melt the cheese.
Step 4: Remove from the pan, season with basil and enjoy!
I definitely suggest this type of recipe to help create a quick meal without a mess. Feel free to substitute sauces (try pesto) and add different veggies and meats! Have a great Monday!
