The last time I was in Colorado with my mom & sister, we stopped in Boulder for a few hours to see my sister’s house and try her new favorite pizzeria. Pizzeria Locale is actually on my “USA-BEST PIZZA” list, so I was excited to hit another great spot with a killer reputation. Here are a few things that stood out to me within a few minutes of entering the restaurant.
- There is wine on tap—who can beat that!?
- They slice fresh prosciutto
- They have a beautiful pizza oven
- They have a garage door which opens so people can eat at the bar from outside the restaurant!
Anyway, mom, Ariel, Nicole, and I shared some salads and pizzas. Being a traditional pizzeria from Napoli, Italy, they served cut-your-own pizzas and light & fresh salads. We ordered the Antica (Arugula, Parmigiano reggiano, balsamic vinegar) and the Artigianale (salame, provolone, chick peas, radicchio, oregano, red wine vinegar). Both salads were scrumptious and a simple start to our meals. By sharing the salads, portions weren’t huge, but we were able to save room for the next course.
We ordered the Margherita pizza and the suggested Maiale (piennolo tomatoes, mozzarella di bufala, parmigiano reggiano, prosciutto crudo, and arugula). They were both so delicious. As far as Neopolitan pizzas go, Pizzeria Locale is right up there with my favorites. I like the special touches they have with their house-sliced fresh prosciutto and wine on tap. This pizza is the kind that makes me feel like I could eat a whole pie and want two more… and that’s what makes a good pizza place! So there you have it, readers, I am and always will be a sucker for Neapolitan pizza!
