I must admit, the first time I visited Giampietro’s (over two years ago), I was extremely dehydrated and suffering from altitude sickness. It did not involve vomiting, but I was delirious and dizzy most of my first 60 hours in Colorado. Jon and I were excited to head over and try out some of the best pizza in the mountains. We arrived around 8:00pm and put our name down on the wait list. The 10-table restaurant was packed at the time, but we could see people clearing out. Just as Jon sipped his first drink at the bar nearby, they called our phone. We finished up and headed back to eat. We ordered a house salad and two slices of the NY-style pizza. I was eying the Sicilian-style ZA, but they only served it as a whole pizza, so that was out of the question. I loved the dressing on the house salad. It was light and fresh, and a great starter to our meal. The bread was warm and fluffy and addicting. I had to control my urge to eat all of it before our slices arrived.  Wood-fired oven perfection Bring on some more brick-oven/wood-oven (whatever cool oven) pizza! I guess I went the fancy route with my ZA this past month! When I was in Boulder, we checked out Da Lupo pizza. Actually, I picked it up and brought it back to my sister’s house since she was getting ready to move. The restaurant is located in a strip mall, but caters to all types of crowds, and prices are reasonable for this style of dining. The prep area was in plain sight of the diners, which adds to the feel of the restaurant, along with a meat slicer on display. This means all your toppings are freshly sliced as they prep the pizza.  Yummy Margherita Pizza! The last time I was in Colorado with my mom & sister, we stopped in Boulder for a few hours to see my sister’s house and try her new favorite pizzeria. Pizzeria Locale is actually on my “USA-BEST PIZZA” list, so I was excited to hit another great spot with a killer reputation. Here are a few things that stood out to me within a few minutes of entering the restaurant.
